Founded in 1594 for Catholic Chinese the Spanish wanted to keep an eye on, Binondo is the oldest Chinatown on Earth — and still a working neighborhood where Fujian recipes picked up Spanish names and Tagalog tongues. Skip the fancy stuff: squeeze into a panciteria, then crawl the alleys — Carvajal, Salazar, Estero — on foot with small bills, so the spend lands straight in family-run stalls.

In 1918 a penniless Cantonese schoolteacher peddled chicken noodle soup from shoulder baskets to win back a girl whose parents thought him too poor. He won her — and gave the country the mami and popularized the siopao. The legendary green-walled Quiapo branch closed in 2020, but the family's original Quezon City restaurant still ladles out the same gloriously old-school bowl; order the mami AND a special siopao, that's the law.

Quiapo is Manila's stomach: kwek-kwek bobbing in orange batter, fishballs on bamboo sticks, taho ladled warm, and the bold local claim that halo-halo itself was born right here at Quinta Market in the 1920s, a tropical riff on Japanese mitsumame. Point at what you want, eat standing up, and let the vendor build your shaved-ice tower with beans, leche flan, and ube.
Intramuros — the walled cityIntramuros, Manila — Fort Santiago, Manila Cathedral, San Agustin Church
Spain raised Intramuros in 1571 to run an Asian empire from behind these walls — cathedrals and cannons inside, everyone else kept out. Walk it: Fort Santiago, where Rizal spent his last night; the Manila Cathedral, whose first incarnation dates to 1571; then San Agustin Church, finished in 1607, the oldest stone church in the country and a UNESCO site that somehow survived the WWII flattening of everything around it.
Feast of the Black Nazarene (Traslación)Quiapo Church (Minor Basilica of the Black Nazarene), every January 9
Every January 9 a maroon sea of barefoot devotees floods Quiapo to touch a dark, life-sized Christ carrying the cross — the country's most fervent procession. In 2026 it ran a record 30-plus hours and drew some 9.6 million people. This is faith at full volume: sweat, towels flung to wipe the image, ropes hauled by thousands. Nothing else on the calendar shows you Manila's raw devotion like it.

Decades ago Sta. Cruz, Quiapo, and Tondo each had their own santeros carving wooden saints; their descendants and the encarnadores who paint the images still keep the trade breathing around Quiapo Church and along Tayuman and Oroquieta. At dawn, vendors string sampaguita garlands by hand. Buy a carved rosary or a fresh lei straight from the maker on the plaza.

Sweet ground-corn cakes steamed in their own husks, soft and faintly milky — a Northern Mindanao merienda CDO has made its own. Buy them hot off a Cogon or Divisoria vendor's cart; they're best eaten warm before they cool and firm up.

CDO's gift to the appetizer course: sinugba (grilled pork belly) crashed into kinilaw (vinegar-cured tuna), so you get smoky and sour, fatty and fresh, in one bite. It's on nearly every local menu — order it first and thank the city later.

The truest CDO lunch is a stool inside Cogon Market with a bowl of melt-soft humba or rich pork-knuckle balbacua. 'Humbaan ni Aling Violy' is the name to know — over 100 kg of pata stewed daily, no menu theatrics, just decades of practice.

CDO calls itself the whitewater rafting capital of the Philippines, and the river that named the city is the playground — 14 to 21 rapids threading gorges about an hour out of town. The adventurous flip side of all that humba and binaki.

Camiguin's volcanic soil grows lanzones so sweet the whole island throws a festival for them. Around October the trees glow gold with the grape-sized fruit — buy them by the kilo and taste why locals insist no other lanzones comes close.

The soft, yema-filled bun that became Camiguin's defining pasalubong — born in 1990 when Eleanor Popera Jose baked a batch from what was left of her husband's Christmas bonus, founding Vjandep. Eat one fresh on-island and you'll understand the obsession.
Kiping with latikMambajao public market and local stalls
A humble island sweet: a thin, crispy cassava wafer drizzled with latik, the caramelized coconut sauce locals can't get enough of. Find it at the market alongside suman and binaki — proper merienda for a few pesos.
The Sunken CemeteryOff Catarman, boat or shoreline viewing
When Mt. Vulcan erupted in the 1870s it dragged the old town cemetery under the sea — now a giant cross marks the spot and divers swim over coral-crusted tombstones below. Eerie, beautiful, and pure Camiguin: a landmark only a volcanic island could have.
Lanzones FestivalMambajao, third weekend of October
Every October the island honors its golden fruit with street-dancing and costumes literally built from lanzones leaves — the harvest thanksgiving that anchors Camiguin's calendar. Sweet fruit, big drums, small-island warmth.
