Aida's at Manokan Country

Manokan Country is a cluster of competing inasal stalls, not a restaurant — that's the point. Aida's uses no soy sauce in the marinade: calamansi, sinamak (coconut vinegar), lemongrass, ginger, garlic, then basted continuously over charcoal with annatto oil for that orange glow while the fat renders into the smoke. Order pechopak (breast-and-wing), not just the thigh. Local's tip: ask for extra chicken oil to pour over your rice — locals call this the move visitors never think to make, and it changes the dish entirely.
