Purple Sticky Rice Suman & Longaniza de Baler

Aurora's mountain-river province grows a locally adapted black sticky rice variety sweet enough to eat without added sugar — with a faint almost-chocolate depth — wrapped in leaves and steamed as suman de Baler, but with a rice variety this island kept for itself. Pair it at breakfast with Longaniza de Baler, a garlicky coarse sausage distinct from the sweet northern longganisa and the spiced southern variants, plus pako (wild fiddlehead fern) salad as a fresh side. Local's tip: eat at a small karinderya or beachside stall along the main strip — the food has stayed genuinely local because the surfing economy never bothered to package it.
