A short walk from Basco Airport, the Ivatan Platter at Pension Ivatan holds three dishes with no equivalents elsewhere in the Philippines: uvud (small balls of grated banana pith mixed with ground pork or fish and local spices), lunis (pork preserved in salt and cooked in its own fat — no soy sauce, no vinegar, tastes genuinely ancient), and dibang (flying fish, fried or air-dried one day in salt and vinegar).
