Pancit Molo has no noodles — it is a clear pork broth with handmade dumplings (molo balls) filled with ground pork, shrimp, and chicken, topped with garlic and chicharon, an Ilonggo reworking of Chinese wonton soup that dates to this exact district. Kap Ising's traces its recipe to the 1920s across three generations, and also serves KBL: kadyos (pigeon peas), pork, and young jackfruit soured with batuan fruit, a regional souring agent more complex than tamarind. Local's tip: the Ayala Malls Atria branch is convenient and misses the point — eat in the neighborhood the dish was born in, and ask if the molo balls are fresh-ground that day.
