Most of the fresh seafood on Boracay's restaurant menus arrives from Romblon fishermen — the waters between the Sulu and Visayan Seas make this a prime migratory fish corridor, which the morning market makes visible. The dishes the island keeps for itself: gayabon (fresh gabi leaves slow-cooked into a thick dark paste, richer than Bicol laing), sarsa (coconut broth with large freshwater shrimp and red chili), and Tinnie's Peanut Butter — made from locally grown peanuts, sold in jars at the market, genuinely different from commercial brands. Local's tip: arrive before 8AM for the freshest lapu-lapu from overnight boats, and budget ₱65 for a 230g jar of Tinnie's to take home — it is the most underrated pasalubong in the Visayas.
